Ingredients
- 3 tablespoons finely chopped mint
- 4 tablespoons clear honey
- 4 tablespoons lime juice
- 12 - boneless chicken thighs
- - salt and pepper
- - salad, to serve along with meal
- SAUCE
- 1/2 cup low fat unsweetened thick yogurt
- 1 tablespoon finely chopped mint
- 2 teaspoons grated lime rind
How To Make minty lime chicken

Step 1Combine the mint, honey and lime juice in a bowl and season with salt and pepper to taste. Use toothpicks to keep the chicken thighs in neat shapes and add the chicken to the marinade, turning to coat evenly.

Step 2Leave the chicken to marinate for at least 30 minutes, longer if possible. Cook the chicken on a preheat moderately hot grill or broiler, turning frequently and basting with marinade.

Step 3The chicken is cooked if the juices run clear when the chicken is pierced with a skewer. Meanwhile, mix together the sauce ingredients. Remove the toothpicks and serve the chicken with a salad and the sauce for dipping or pouring.
