How to Make Mim's Mexican Chicken


  • 1Tear tortillas into 1-inch wide strips.
  • 2In a large baking dish, alternate layers of tortillas, chicken meat and cheese (reserve 1/2 cup of cheese for topping) until all the chicken is used.
  • 3Combine the remaining ingredients and pour over the layered mixture.
  • 4Top with reserved cheese.
  • 5Cover with aluminum foil.
  • 6To freeze: flash freeze casserole, then place frozen, covered dish into jumbo freezer bag.
  • 7To prepare: thaw casserole before baking.
  • 8Bake covered casserole at 350-degrees until hot and bubbly.
  • 9Cut with spatula and serve.
  • 10Serving Ideas : Refried Beans, Blue Corn Chips and Guacamole
