Miles James’ Mustard Bourbon Sauce

Ingredients

  • 1 Tbsp
    vegetable oil
  • 2 bunch
    green onions, chopped
  • 2 c
    white onions, chopped
  • 8 lg
    garlic cloves, chopped
  • 2 c
    (packed) golden brown sugar
  • 1 c
    ketchup
  • 1 c
    tomato paste
  • 1 c
    whole grain dijon mustard
  • 1 c
    water
  • 1/2 c
    worcestershire sauce
  • 1/2 c
    apple cider vinegar
  • 1/2 c
    apple juice
  • 1 lg
    dried ancho chili, stemmed, seeded, and cut into small pieces
  • 1 Tbsp
    ground cumin
  • 11/2 c
    bourbon

How To Make

    Heat oil in a large pot over medium heat. Sauté green onions, white onions, and garlic until tender. Mix in all remaining ingredients, adding bourbon last. Simmer sauce until thick and reduced to 7 cups, stirring occasionally, about one hour.
