Ingredients

  • 2 c
    cubed,cooked chicken meat
  • 1/4 c
    chopped onion
  • 4 c
    shredded cheddar cheese
  • 1 c
    sour cream
  • 8
    flour tortillas
  • 1 1/2 c
    chopped tomatoes
  • 1/2 c
    black olives

How to Make Mild Cheesy Chicken Enchiladas

Step-by-Step

  1. Preheat oven to 350 degrees. Lightly grease a 9x13 baking dish.
  2. In a medium bowl, mix the chicken,onion,1 cup cheese, and 3/4 cup sour cream.
    Disperse the mix evenly between the tortillas. Roll into enchiladas, arrange in single layer in baking dish.
  3. In a saucepan over low heat, melt together remaining cheese and sour cream. Pour over the enchiladas, and top with tomatoes and black olives.
  4. Bake in the oven for 20-30 minutes, or until hot and bubbly
