Ingredients
- 3 1/2 pounds chicken, cut into pieces
- salt and pepper, to taste
- 4 tablespoons butter or olive oil
- 1 cup mushrooms, sliced
- 1 green bell pepper, cored, seeded, and finely chopped
- 1/2 cup finely chopped onion
- 1 clove garlic, finely minced
- 2 cups tomatoes, peeled, seeded, and chopped
- 1/2 cup dry vermouth
- 1/2 cup stuffed olives, sliced
- 4 tablespoons grated Parmesan cheese

Step 1Preheat the oven to 350 degrees F.

Step 2Sprinkle the chicken with salt and pepper and brown on all sides in the butter.

Step 3Sprinkle with the mushrooms and cook for 5 minutes.

Step 4Add the green pepper, onions, garlic, tomatoes, and vermouth.

Step 5Cover tightly and bake for 30 minutes.

Step 6Add the olives and cook for 10 minutes longer.
