mexican spaghetti bake
My kids love spaghetti but I sometimes get tired of the same old spaghetti and sauce. I had some chicken I needed to use up so I threw it in the crock pot and came up with the comforting casserole. It makes a lot of chicken! So I halved the mixture for dinner night two of chicken tacos!

Ingredients
- 4-6 - boneless chicken breast
- 1 can seasoned black beans (do not drain)
- 12 ounces salsa (i used traders joes tomatillo and roasted yellow chili salsa
- 15 ounces alfredo lite (jar)
- 24 ounces spaghetti sauce
- 14 1/2 ounces spaghetti
- 8 ounces shredded colby jack
- 1/4 cup chopped green onion
- 1 can chopped green chili

Step 1Add to crock pot. Chicken Breast, seasoned black beans, green onion, green chili and jar salsa. Cook on low for 8 hours. Shred chicken after cooking leave in salsa mixture. Divide chicken mixture in half and reserve for another night. Prepare Spaghetti

Step 2Preheat oven to 350 degrees then cook Spaghetti according to directions. Drain.

Step 3Assemble in following order in a 9x13 pan. 1/2 spaghetti sauce 1/2 Cooked spaghetti 1/2 chicken mixture 1/2 shredded cheese 1 jar of alfredo lite sauce (pour over entire casserole) then top with 1/2 spaghetti 1/2 chicken 1/2 spaghetti sauce top with remaining cheese

Step 4Bake at 350 degrees for 30-40 minutes till cheese is nice a bubbly

Step 5Can garnish with chopped green onion, chopped tomoto, sliced black olives or chopped cilantro
