Ingredients

  • 2
    chicken breasts, whole
  • 1/3 c
    flour
  • 1/3 tsp
    garlic powder
  • 1/3 tsp
    paprika
  • 1/2 tsp
    chili powder
  • 3 Tbsp
    oil
  • 1/4 c
    salsa
  • 4 oz
    monterey jack cheese, shredded

How to Make Mexican Salsa Chicken

Step-by-Step

  1. Pound chicken 1/4 inch thick.
  2. In shallow dish combine flour, garlic powder, paprika and chili powder.
  3. Coat chicken with flour mixture.
  4. Heat oil in large skillet over medium-high heat.
  5. Cook in oil 3-4 minutes each side until lightly browned and no longer pink.
  6. Reduce heat, spoon 1 tablespoon of salsa onto center of each piece of chicken.
  7. Sprinkle with cheese. Cover and cook until cheese melts.
  8. Serve with additional salsa.
  9. Makes 4 servings.
  10. Rice makes a nice addition to this.
