chicken breasts, whole
1/3 c
1/3 tsp
garlic powder
1/3 tsp
1/2 tsp
chili powder
3 Tbsp
1/4 c
4 oz
monterey jack cheese, shredded

How to Make Mexican Salsa Chicken


  • 1Pound chicken 1/4 inch thick.
  • 2In shallow dish combine flour, garlic powder, paprika and chili powder.
  • 3Coat chicken with flour mixture.
  • 4Heat oil in large skillet over medium-high heat.
  • 5Cook in oil 3-4 minutes each side until lightly browned and no longer pink.
  • 6Reduce heat, spoon 1 tablespoon of salsa onto center of each piece of chicken.
  • 7Sprinkle with cheese. Cover and cook until cheese melts.
  • 8Serve with additional salsa.
  • 9Makes 4 servings.
  • 10Rice makes a nice addition to this.
