Ingredients

  • 2 - chicken breasts, whole
  • 1/3 cup flour
  • 1/3 teaspoon garlic powder
  • 1/3 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 3 tablespoons oil
  • 1/4 cup salsa
  • 4 ounces monterey jack cheese, shredded

How To Make mexican salsa chicken

  • Step 1
    Pound chicken 1/4 inch thick.
  • Step 2
    In shallow dish combine flour, garlic powder, paprika and chili powder.
  • Step 3
    Coat chicken with flour mixture.
  • Step 4
    Heat oil in large skillet over medium-high heat.
  • Step 5
    Cook in oil 3-4 minutes each side until lightly browned and no longer pink.
  • Step 6
    Reduce heat, spoon 1 tablespoon of salsa onto center of each piece of chicken.
  • Step 7
    Sprinkle with cheese. Cover and cook until cheese melts.
  • Step 8
    Serve with additional salsa.
  • Step 9
    Makes 4 servings.
  • Step 10
    Rice makes a nice addition to this.
