Ingredients

  • 1
    onion, diced
  • 1
    bell pepper, diced
  • 2 clove
    garlic, minced
  • 1 c
    carrots, diced
  • 1 can(s)
    diced tomatoes with green chiles
  • 1 can(s)
    black beans, drained and rinsed
  • 4 c
    chicken broth
  • 3 c
    frozen corn
  • 2 tsp
    chili powder
  • 1 Tbsp
    ground cumin
  • 1/4 tsp
    cayenne pepper
  • 1/4 tsp
    salt
  • 2-3 c
    shredded cooked chicken

How to Make Mexican Chicken Soup - Slow Cooker

Step-by-Step

  1. Stir all ingredients except chicken together in slow cooker.
    Cover, and cook on low for 5-7 hours.
  2. Stir in chicken and cover.
    Continue cooking for 1 hour.
  3. Total cooking time: 6-8 hours
  4. Notes: *"Gluten free" - as long as broth and chili powder are gluten free

    Omit the chicken (double up on the beans) and use vegetable broth for a vegetarian version of this soup.
