I love soup - here's one that is easy and ready for you when you walk in from a cold day outdoors or a long day at work. Enjoy!

Ingredients

  • 1 - onion, diced
  • 1 - bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 can diced tomatoes with green chiles
  • 1 can black beans, drained and rinsed
  • 4 cups chicken broth
  • 3 cups frozen corn
  • 2 teaspoons chili powder
  • 1 tablespoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • 2-3 cups shredded cooked chicken

How To Make mexican chicken soup - slow cooker

  • Step 1
    Stir all ingredients except chicken together in slow cooker. Cover, and cook on low for 5-7 hours.
  • Step 2
    Stir in chicken and cover. Continue cooking for 1 hour.
  • Step 3
    Total cooking time: 6-8 hours
  • Step 4
    Notes: *"Gluten free" - as long as broth and chili powder are gluten free Omit the chicken (double up on the beans) and use vegetable broth for a vegetarian version of this soup.
