Ingredients
- 1 - onion, diced
- 1 - bell pepper, diced
- 2 cloves garlic, minced
- 1 cup carrots, diced
- 1 can diced tomatoes with green chiles
- 1 can black beans, drained and rinsed
- 4 cups chicken broth
- 3 cups frozen corn
- 2 teaspoons chili powder
- 1 tablespoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon salt
- 2-3 cups shredded cooked chicken

Step 1Stir all ingredients except chicken together in slow cooker. Cover, and cook on low for 5-7 hours.

Step 2Stir in chicken and cover. Continue cooking for 1 hour.

Step 3Total cooking time: 6-8 hours

Step 4Notes: *"Gluten free" - as long as broth and chili powder are gluten free Omit the chicken (double up on the beans) and use vegetable broth for a vegetarian version of this soup.
