After much searching, I think I finally found a Mexican casserole that is really quick and yummy!!!

Ingredients
- 1-1 1/2 pounds boneless chicken breast (shred into pieces)
- 1 cup chicken broth
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 can rotel
- 1 pound velveeta cheese
- 1 medium onion minced
- 3/4 - bag of regular cheese doritos
How To Make mexican chicken casserole

Step 1In sauce pan, mix broth, soups, rotel and velveeta together until melted consistently.

Step 2In baking dish, spray with cooking spray, layer Doritos, chicken shreds and minced onion. Pour half mixture from sauce pan and then repeat.

Step 3Bake at 350 degrees for 40-45 minutes.
