2-3chicken breasts, boneless and skinless

1bag instant rice

1 cancream of chicken soup

1 canblack beans
-
1 canrotel tomatoes
-
1corn
-
1/2 pkgtaco seasoning mix

velveeta
-
shredded cheddar
How To Make mexican chicken casserole

1Season and bake chicken breast. Prepare rice per directions. In casserole dish add rice, soup, black beans, tomatoes, corn and taco seasoning. Add Velveeta and shredded cheese to your liking.

2Bake at 350 degrees for 20-30 minutes til cheese melts. I add a bit more cheese and Chili Lime tortilla strips on top before serving. Would be great with sour cream, salsa and guac!
