Mexican Chicken Casserole
2-3chicken breasts, boneless and skinless
1bag instant rice
1 can(s)cream of chicken soup
1 can(s)black beans
1 can(s)rotel tomatoes
1/2 pkgtaco seasoning mix
How to Make Mexican Chicken Casserole
- Season and bake chicken breast. Prepare rice per directions. In casserole dish add rice, soup, black beans, tomatoes, corn and taco seasoning. Add Velveeta and shredded cheese to your liking.
- Bake at 350 degrees for 20-30 minutes til cheese melts. I add a bit more cheese and Chili Lime tortilla strips on top before serving.
Would be great with sour cream, salsa and guac!
