chicken breasts, boneless and skinless

bag instant rice
1 can(s)
cream of chicken soup
1 can(s)
black beans
1 can(s)
rotel tomatoes
1
corn
1/2 pkg
taco seasoning mix
velveeta
shredded cheddar

How to Make Mexican Chicken Casserole

Step-by-Step

  • 1Season and bake chicken breast. Prepare rice per directions. In casserole dish add rice, soup, black beans, tomatoes, corn and taco seasoning. Add Velveeta and shredded cheese to your liking.
  • 2Bake at 350 degrees for 20-30 minutes til cheese melts. I add a bit more cheese and Chili Lime tortilla strips on top before serving.

    Would be great with sour cream, salsa and guac!
