Ingredients
- 2-3 - chicken breasts, boneless and skinless
- 1 - bag instant rice
- 1 can cream of chicken soup
- 1 can black beans
- 1 can rotel tomatoes
- 1 - corn
- 1/2 package taco seasoning mix
- - velveeta
- - shredded cheddar
How To Make mexican chicken casserole

Step 1Season and bake chicken breast. Prepare rice per directions. In casserole dish add rice, soup, black beans, tomatoes, corn and taco seasoning. Add Velveeta and shredded cheese to your liking.

Step 2Bake at 350 degrees for 20-30 minutes til cheese melts. I add a bit more cheese and Chili Lime tortilla strips on top before serving. Would be great with sour cream, salsa and guac!
