Ingredients

  • 2-3 - chicken breasts, boneless and skinless
  • 1 - bag instant rice
  • 1 can cream of chicken soup
  • 1 can black beans
  • 1 can rotel tomatoes
  • 1 - corn
  • 1/2 package taco seasoning mix
  • - velveeta
  • - shredded cheddar

How To Make mexican chicken casserole

  • Step 1
    Season and bake chicken breast. Prepare rice per directions. In casserole dish add rice, soup, black beans, tomatoes, corn and taco seasoning. Add Velveeta and shredded cheese to your liking.
  • Step 2
    Bake at 350 degrees for 20-30 minutes til cheese melts. I add a bit more cheese and Chili Lime tortilla strips on top before serving. Would be great with sour cream, salsa and guac!
