    large tomatos, peeled and chopped

    shredded white meat chicken
  • 1/2 c
    chicken broth
  • 2 tsp
    chili powder
  • 1 tsp
  • 1 tsp
    ground cumin
  • 1 tsp
  • 1 c
    shredded cheddar
  • 6
    corn tortilla cut in forth's

How to Make Mexican Chicken Casserole


  1. preheat oven to 350 degrees.
    spray 13x9 baking dish with cooking spray
  2. saute onion, add tomato, chicken broth, chili powder, salt, cumin, and oregano. Bring to a boil and simmer 5 minutes
  3. Layer half of chicken mixture then half tortillas, then half cheese, and repeat. bake 25-30 minutes
