Ingredients

  • 2 (7oz) cans white chicken meat
  • 2 (10oz) cans cream of chicken soup
  • 1 (10 oz) can ro-tel tomatoes w/ green chilies
  • 1/2 cup chopped onion
  • 1 1/2 cups evaporated milk
  • 1 (9 oz) package tortilla chips
  • 1 1/2 cups shredded cheddar cheese

How To Make mexican chicken casserole

  • Step 1
    Combine all ingredients except cheese in a bowl. Mixture will be soupy. Spread into a greased 9x13 baking dish. Top w/ cheese.
  • Step 2
    Bake at 350 degrees for 30 min. or until bubbly. You may prepare this in advance adding the chips and cheese at baking time.
