Ingredients

  • 2 (7oz) can(s)
    white chicken meat
  • 2 (10oz) can(s)
    cream of chicken soup
  • 1 (10 oz) can(s)
    ro-tel tomatoes w/ green chilies
  • 1/2 c
    chopped onion
  • 1 1/2 c
    evaporated milk
  • 1 (9 oz) pkg
    tortilla chips
  • 1 1/2 c
    shredded cheddar cheese

How to Make Mexican Chicken Casserole

Step-by-Step

  1. Combine all ingredients except cheese in a bowl. Mixture will be soupy. Spread into a greased 9x13 baking dish. Top w/ cheese.
  2. Bake at 350 degrees for 30 min. or until bubbly. You may prepare this in advance adding the chips and cheese at baking time.
