If you don't want to use the whole chicken use 4 chicken breasts.

Ingredients

  • 1 - bag of fritos
  • 1 - whole chicken, boiled, deboned and shredded
  • 1 can cream of mushroom soup
  • 1 can ro-tel
  • 1/2 package velvetta

How To Make mexican chicken casserole.

  • Step 1
    Preheat oven to 350
  • Step 2
    Mix the chicken with cream of mushroom soup, and rotel
  • Step 3
    Lightly smash into big pieces 1/2 the bag of fritos
  • Step 4
    Add to mixture. Put mixture into a 13x9 casserole/cake pan.
  • Step 5
    Layer with the remaining corn chips.
  • Step 6
    Top with thinly sliced velvetta.
  • Step 7
    Cover with aluminum foil except the last five minutes.
