How to Make Mexican Chicken Casserole.
- Preheat oven to 350
- Mix the chicken with cream of mushroom soup, and rotel
- Lightly smash into big pieces 1/2 the bag of fritos
- Add to mixture. Put mixture into a 13x9 casserole/cake pan.
- Layer with the remaining corn chips.
- Top with thinly sliced velvetta.
- Cover with aluminum foil except the last five minutes.
