1heat oil and butter in large skillet. Brown chicken breasts in oil until lightly browned on both sides. Add Rice mix and 1 1/2 cups of water, diced canned and fresh tomatoes. Mix to make sure all rice is in water. Let simmer til rice is cooked thoroughy covered on low heat,stirring occasionally, add extra 1/4 c water if necessary.Just before serving, add olives. Serve with Cheese on side at table. Great with warmed pita bread!
