This was my grandmother's recipe. My uncle lovingly named it roadrunner stew.

Ingredients

  • 1 - chicken, boned
  • 1 can cream of chicken soup
  • 1 large onion, chopped
  • 10 oz - cheese, grated
  • 1 can cream of mushroom soup
  • 1 cup chicken broth
  • 1 package tortillas
  • 1 can rotel tomatoes

How To Make mexican chicken (aka: roadrunner stew)

  • Step 1
    Cook onions in butter. Add soups and tomatoes, simmer for a few minutes.
  • Step 2
    In a 9x13" pan or baking dish place a layer of tortillas, a layer of cooked chicken and half the liquid. Repeat layers and top with grated cheese.
  • Step 3
    Bake at 350 degrees for about 20 minutes or until bubbly.
