How to Make Mexican Chicken (aka: Roadrunner Stew)
- Cook onions in butter. Add soups and tomatoes, simmer for a few minutes.
- In a 9x13" pan or baking dish place a layer of tortillas, a layer of cooked chicken and half the liquid. Repeat layers and top with grated cheese.
- Bake at 350 degrees for about 20 minutes or until bubbly.
