This was my grandmother's recipe. My uncle lovingly named it roadrunner stew.

Ingredients

1 can(s)
cream of chicken soup
1 large
onion, chopped
10 oz
cheese, grated
1 can(s)
cream of mushroom soup
1 c
chicken broth
1 pkg
tortillas
1 can(s)
rotel tomatoes

How to Make Mexican Chicken (aka: Roadrunner Stew)

Step-by-Step

  • 1Cook onions in butter. Add soups and tomatoes, simmer for a few minutes.
  • 2In a 9x13" pan or baking dish place a layer of tortillas, a layer of cooked chicken and half the liquid. Repeat layers and top with grated cheese.
  • 3Bake at 350 degrees for about 20 minutes or until bubbly.
