Ingredients
- 1 - chicken, boned
- 1 can cream of chicken soup
- 1 large onion, chopped
- 10 oz - cheese, grated
- 1 can cream of mushroom soup
- 1 cup chicken broth
- 1 package tortillas
- 1 can rotel tomatoes
How To Make mexican chicken (aka: roadrunner stew)

Step 1Cook onions in butter. Add soups and tomatoes, simmer for a few minutes.

Step 2In a 9x13" pan or baking dish place a layer of tortillas, a layer of cooked chicken and half the liquid. Repeat layers and top with grated cheese.

Step 3Bake at 350 degrees for about 20 minutes or until bubbly.
