This was my grandmother's recipe. My uncle lovingly named it roadrunner stew.

    chicken, boned
  • 1 can(s)
    cream of chicken soup
  • 1 large
    onion, chopped
  • 10 oz
    cheese, grated
  • 1 can(s)
    cream of mushroom soup
  • 1 c
    chicken broth
  • 1 pkg
    tortillas
  • 1 can(s)
    rotel tomatoes

How to Make Mexican Chicken (aka: Roadrunner Stew)

Step-by-Step

  1. Cook onions in butter. Add soups and tomatoes, simmer for a few minutes.
  2. In a 9x13" pan or baking dish place a layer of tortillas, a layer of cooked chicken and half the liquid. Repeat layers and top with grated cheese.
  3. Bake at 350 degrees for about 20 minutes or until bubbly.
