Ingredients
- 1 package corn tortillas
- 2 cans cream of chicken soup
- 3 cups sour cream
- 2 cans (4 oz) chopped green chiles
- 4 - chopped scallions
- 1 cup chopped black olives
- 3 cups chopped cooked chicken
- 1 cup grated cheddar cheese
- 1 cup grated monterey jack cheese
How To Make mert's sour cream chicken enchiladas

Step 1In a large bowl, mix all ingredients except tortillas and cheeses. In another bowl, mix the two cheeses. Lay a tortilla flat on a surface. Spoon a large spoonful of chicken mixture onto tortilla. Top with a spoonful of cheese. Roll up and place (seam side down) into a casserole dish. Repeat till casserole is full. You will have remaining meat mixture. Pour over tortillas. Top with cheese. Bake for 45 min at 350 degrees or till bubbly and cheese is melted.
