megan's homemade mac and cheese

This is one of my family's favorites... you can cut a lot of the fat and calories by using lite or fat free ingredients. Or you can leave out the chicken and serve it as a side dish. Great for potlucks and social gatherings too!

Ingredients

  • 16 ounces macaroni (shells or elbow) cooked
  • 1 1/2 cups ricotta cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups shredded cooked chicken
  • 4 cups shredded cheddar cheese, divided
  • 1/2 cup shredded parmesan cheese
  • 8 ounces cream cheese, softened
  • 1/4 cup butter, melted
  • 3/4 cup milk
  • 1/2 cup seasoned bread crumbs
  • 1 teaspoon each salt and pepper

How To Make megan's homemade mac and cheese

  • Step 1
    Preheat oven to 375 degrees.
  • Step 2
    In a large mixing bowl combine cooked macaroni, ricotta, garlic, onion, chicken, 2 cups of the shredded cheese, parmesan cheese, cream cheese, butter, milk, salt and pepper.
  • Step 3
    Pour into a 9x13 baking pan or casserole dish.
  • Step 4
    Top with remaining cheese and bread crumbs.
  • Step 5
    Bake covered for 30 minutes.
  • Step 6
    Uncover and bake an aditional 10-15 minutes, or until topping is browned and crispy.
  • Step 7
    Serve with your favorite veggies and enjoy!
