This is one of my family's favorites... you can cut a lot of the fat and calories by using lite or fat free ingredients. Or you can leave out the chicken and serve it as a side dish. Great for potlucks and social gatherings too!

Ingredients

  • 16 oz
    macaroni (shells or elbow) cooked
  • 1 1/2 c
    ricotta cheese
  • 1 tsp
    garlic powder
  • 1 tsp
    onion powder
  • 2 c
    shredded cooked chicken
  • 4 c
    shredded cheddar cheese, divided
  • 1/2 c
    shredded parmesan cheese
  • 8 oz
    cream cheese, softened
  • 1/4 c
    butter, melted
  • 3/4 c
    milk
  • 1/2 c
    seasoned bread crumbs
  • 1 tsp
    each salt and pepper

How to Make Megan's Homemade Mac and Cheese

Step-by-Step

  1. Preheat oven to 375 degrees.
  2. In a large mixing bowl combine cooked macaroni, ricotta, garlic, onion, chicken, 2 cups of the shredded cheese, parmesan cheese, cream cheese, butter, milk, salt and pepper.
  3. Pour into a 9x13 baking pan or casserole dish.
  4. Top with remaining cheese and bread crumbs.
  5. Bake covered for 30 minutes.
  6. Uncover and bake an aditional 10-15 minutes, or until topping is browned and crispy.
  7. Serve with your favorite veggies and enjoy!
