4bone-in chicken breasts, skinned
1 largegreen bell pepper, sliced
1 largeonion, sliced
1 largecan of tomatoes, broken up
2 Tbspolive oil
·salt and pepper
1 1/2 tspitalian seasoning
1 boxorzo pasta
How to Make Megan's Chicken Caccitore
- Season the chicken breasts with salt and pepper.
Heat olive oil over medium heat.
Brown chicken on all sides on medium-high heat.
- Add the onion, green pepper, tomatoes, and Italian seasoning.
Bring to a boil, stirring to combine ingredients.
Reduce heat to simmer and cover.
- Continue to cook about 20 minutes, stirring occasionally.
Meanwhile, cook and drain the orzo.
- Add saffron strands to chicken mixture and stir.
Cook about 5 more minutes, then serve over orzo and enjoy! (You may want to top it off with some shredded mozzarella or Italian-style cheese.)
