meat lover's chili
Part of this recipe is devoted to my Grandpa Biegacki who loved making chili but would never share his recipe. The only way you knew some of the things he put in it was to look in the kitchen garbage. Seriously, this is the truth. That is how my Mom and I found out he put in V8 juice cause he would get up at 3 am to start making his secret chili recipes. Some of the recipe is my own flair. Hope this keeps you warm on a winter's night.

Ingredients
- 2 pounds beef cubes (the kind you use for stew)
- 2 pounds ground pork
- 1 - whole roasted chicken
- 4 cans chili beans, medium sauce (bush's)
- 2 bottles dark beer, (we used negra modelo)
- 1/2 - container of v8 tomato juice
- 1 package sofrito
- 2 cups jalapeno slices
- 1 - vanilla bean, seeds
- 2 cans small of green chilies
- 1 can chipotle peppers in adobo sauce
- 4 medium serrano peppers, diced
- 3 cans diced tomatoes, basil, garlic and oregano seasoned
- 2 cans tamales, canned and chopped
- 1/2 tablespoon black pepper
- 2 tablespoons chili 9000 (penzeys)
- 1 tablespoon northwoods seasonings (penzeys)
- 2 tablespoons ancho chili pepper
- 1 tablespoon paprika
- 1/2 tablespoon cumin
- 1/2 tablespoon onion salt
- 2 tablespoons cinnamon
- 2 tablespoons garlic powder
- 2 tablespoons cilantro, dried
- 1 tablespoon fresh minced garlic
- 1/4 cup sugar
- - salt for cooking beef
- GARNISHES
- - cheddar cheese, shredded
- - sour cream

Step 1Ingredients used

Step 2Put your beef cubes into a crockpot with 3 tbsp of olive oil. Sprinkle the beef cubes with salt. Cook on a medium heat for 3 hours. In a skillet brown your pork in a tad bit of olive oil and drain it.

Step 3In an 8 quart pot add your cooked meats, beer, chili beans, diced tomato (whole cans), sliced jalapenos, can of chipotle peppers and adobo sauce, green chilies, V8 juice and sofrito sauce. Add your spices. Cook for 3 to 4 hours on medium to low heat and the longer it cooks the more flavorful it gets. About 20 minutes before taking off the heat add your deboned roasted chicken meat, tamales and vanilla bean seeds.

Step 4Serve up your chili and garnish with cheese and sour cream.
