Ingredients
- 2 tablespoons olive oil
- 3 3/4 large whole chicken, quartered
- - salt
- - freshly ground black pepper
- 2 tablespoons butter
- 4 cloves garlic, peeled and halved
- 2 cups sherry vinegar
- - fresh basil leaves
How To Make mary's vinegar chicken

Step 1Preheat over to 450 degrees. In a large ovenproof skillet, heat olive oil over medium-high heat until smoking.

Step 2Season chicken with salt and pepper.

Step 3Place chicken pieces skin-side down in the pan and sear until golden brown, about 5 minutes. Add butter and garlic cloves and cook 2 more minutes.

Step 4Add vinegar (carefully)

Step 5Turn chicken over and put pan in oven. Cook for 20 to 30 minutes or until an instant-read thermometer indicates 160 degrees. Garnish with basil. Serve with french fries or mash potatoes.
