Found this recipe in Playboy as I was throwing away the issue.

Ingredients

  • 2 Tbsp
    olive oil
  • 3 3/4 large
    whole chicken, quartered
  • ·
    salt
  • ·
    freshly ground black pepper
  • 2 Tbsp
    butter
  • 4 clove
    garlic, peeled and halved
  • 2 c
    sherry vinegar
  • ·
    fresh basil leaves

How to Make Mary's Vinegar Chicken

Step-by-Step

  1. Preheat over to 450 degrees. In a large ovenproof skillet, heat olive oil over medium-high heat until smoking.
  2. Season chicken with salt and pepper.
  3. Place chicken pieces skin-side down in the pan and sear until golden brown, about 5 minutes. Add butter and garlic cloves and cook 2 more minutes.
  4. Add vinegar (carefully)
  5. Turn chicken over and put pan in oven. Cook for 20 to 30 minutes or until an instant-read thermometer indicates 160 degrees. Garnish with basil. Serve with french fries or mash potatoes.
