martine's hawaiian chicken salad

We use to eat at a deli in Killeen, TX, in the 80's. Once we tried their chicken salad sandwich we were hooked! They closed many years ago, so I made up my own recipe to taste like theirs. One of the important parts is the croissants - it just doesn't taste the same on anything else! 3-18-18 Since I first posted my recipe, I've added finely chopped celery. I will add 1/4 cup to taste. It's optional so if you don't like it, the original recipe tastes great w/o it! Sometimes I'll use a large 3lb can of chicken - just double all ingredients to match.

Ingredients For martine's hawaiian chicken salad

  • 1/2 c
    miracle whip light (or more if preferred)
  • 3 Tbsp
    sliced almonds
  • 1/2 c
    crushed pineapple, in its own juice. press most of the liquid out of can
  • 2 can
    premium chunk chicken breast, 13.5 oz each
  • 8
    croissants
  • 1/4 c
    celery, chopped fine (optional)

How To Make martine's hawaiian chicken salad

    Place chicken in a large mixing bowl and break it up with a fork til the pieces are very small.

    Add the other ingredients and mix well.

    Cut croissants in half and spread Miracle Whip on both inside halves. Divide the chicken salad between the croissants and enjoy! :)
