Martine's Hawaiian Chicken Salad

Martine Bykowski

We use to eat at a deli in Killeen, TX, in the 80's. Once we tried their chicken salad sandwich we were hooked! They closed many years ago, so I made up my own recipe to taste like theirs. One of the important parts is the croissants - it just doesn't taste the same on anything else!
Since I first posted my recipe, I've added finely chopped celery. I will add 1/4 cup to taste. It's optional so if you don't like it, the original recipe tastes great w/o it!
Sometimes I'll use a large 3lb can of chicken - just double all ingredients to match.
