I adapted this recipe from one found on the Internet several years ago. It quickly became a family favorite. It is an easy yet elegant entree, especially for garlic lovers! So simple, yet so good! Be sure to use fresh grated Parmesan; it does make a difference.

Ingredients

  • 4 cloves garlic, minced
  • 1/4 cup olive oil (extra virgin prefered)
  • 1/2 cup bread crumbs, dried
  • 1/2 cup fresh parmesan cheese, grated
  • 2 - chicken breasts, halved and pounded thin

How To Make martha louise's garlic chicken

  • Step 1
    Pre-heat oven to 350 degrees.
  • Step 2
    In skillet warm garlic in olive oil for a few minutes to blend flavors. Dip chicken pieces in oil.
  • Step 3
    Combine bread crumbs and Parmesan cheese. Coat chicken well in crumbs. Place chicken in shallow baking dish.
  • Step 4
    Bake for 20 - 25 minutes, or until just tender. *Chicken may also be sauteed in skillet, 10 - 15 minutes or until cooked through. Great with rice or noodles.
