Maple & dijon flavored chicken

I made this up one day when I was craving something sweet and fall-tasting. It turned out so good.

1 Tbsp
olive oil
1-1/4 lb
boneless, skinless chicken breasts
shallots, chopped
2 tsp
minced garlic
1 c
chicken broth
1/3 c
real maple syrup
1 Tbsp
dijon mustard
1/8 tsp
crushed red pepper


1Heat oil in lg skillet over med-high heat. Cook chicken in skillet until cooked through. Remove chicken and keep warm.
2Cook shallots and garlic in same skillet, stirring, until tender. Stir in broth, syrup mustard and red pepper.
3Bring to a boil. Reduce heat to low. Cook until slightly thickened, about 10 mins. Serve sauce over chicken.
