    extra-virgin olive oil
  • 4
    skinless, boneless chicken breast halves (6 ounces each)
  • 1/4 tsp
    salt
  • 1/4 tsp
    freshly ground black pepper
  • 1/4 c
    orange marmalade
  • 1/4 c
    cherry spreadable fruit (like polaner's all-fruit)
  • 1 tsp
    low sodium soy sauce
  • 1 tsp
    butter
  • 1 Tbsp
    bourbon

How to Make Manhattan Glazed Chicken

Step-by-Step

  1. Heat a large heavy skillet over medium-high heat. Add oil to the pan; swirl to coat. Sprinkle the chicken evenly with salt and pepper. Add the chicken to the pan; cook 5 minutes on each side or until done. Remove the chicken from the pan; keep warm.
  2. Place marmalade, cherry spreadable fruit, and soy sauce in a small saucepan; bring to a boil. Reduce heat and simmer 3 minutes or until very thick, stirring frequently.
  3. Add the butter to the fruit sauce; stirring to combine. Remove from the heat; stir in the bourbon. Spoon the glaze over the chicken.
