- 1 1/2 teaspoons extra-virgin olive oil
- 4 - skinless, boneless chicken breast halves (6 ounces each)
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup orange marmalade
- 1/4 cup cherry spreadable fruit (like polaner's all-fruit)
- 1 teaspoon low sodium soy sauce
- 1 teaspoon butter
- 1 tablespoon bourbon

Step 1Heat a large heavy skillet over medium-high heat. Add oil to the pan; swirl to coat. Sprinkle the chicken evenly with salt and pepper. Add the chicken to the pan; cook 5 minutes on each side or until done. Remove the chicken from the pan; keep warm.

Step 2Place marmalade, cherry spreadable fruit, and soy sauce in a small saucepan; bring to a boil. Reduce heat and simmer 3 minutes or until very thick, stirring frequently.

Step 3Add the butter to the fruit sauce; stirring to combine. Remove from the heat; stir in the bourbon. Spoon the glaze over the chicken.
