mango chicken
This is an easy to make recipe and the chicken is tender and juicy. You can use prepared mango salsa. My husband is a picky eater and loved the flavors in the recipe. I started with chicken tenders and I cubed them while they were partly frozen. You can switch plain onion soup mix for the mushroom onion mix.

Ingredients
- - canola pan spray
- 1 pound chicken tenders, cubed
- 1/4 cup apple cider vinaigrette
- 1 package mushroom onion "recipe secrets"
- 2 small mangoes, cubed (or 1 lg)
- 1 small zucchini, cubed
How To Make mango chicken

Step 1Spray 13" square pan (or equivalent) with canola spray.

Step 2Marinate Chicken in vinaigrette for 1/2 - 1 hr. in refrigerator.

Step 3Prepare mango salsa: Cube mango into small cubes. Cube zucchini into small cubes and stir together. Keep in refrigerator until ready to use.

Step 4Place marinated chicken into baking pan. Top with "Recipe Secrets" mix. Stir thoroughly.

Step 5Cover chicken mixture with foil. Bake in a 400 degree oven for 40 minutes.

Step 6Place salsa mixture in microwave and cook on high for 2 minutes.

Step 7Remove chicken from oven, uncover and stir thoroughly. Top with salsa mixture. Recover and Cook an additional 5 minutes.
