This is an easy to make recipe and the chicken is tender and juicy. You can use prepared mango salsa. My husband is a picky eater and loved the flavors in the recipe. I started with chicken tenders and I cubed them while they were partly frozen. You can switch plain onion soup mix for the mushroom onion mix.

Ingredients

  • - canola pan spray
  • 1 pound chicken tenders, cubed
  • 1/4 cup apple cider vinaigrette
  • 1 package mushroom onion "recipe secrets"
  • 2 small mangoes, cubed (or 1 lg)
  • 1 small zucchini, cubed

How To Make mango chicken

  • Step 1
    Spray 13" square pan (or equivalent) with canola spray.
  • Step 2
    Marinate Chicken in vinaigrette for 1/2 - 1 hr. in refrigerator.
  • Step 3
    Prepare mango salsa: Cube mango into small cubes. Cube zucchini into small cubes and stir together. Keep in refrigerator until ready to use.
  • Step 4
    Place marinated chicken into baking pan. Top with "Recipe Secrets" mix. Stir thoroughly.
  • Step 5
    Cover chicken mixture with foil. Bake in a 400 degree oven for 40 minutes.
  • Step 6
    Place salsa mixture in microwave and cook on high for 2 minutes.
  • Step 7
    Remove chicken from oven, uncover and stir thoroughly. Top with salsa mixture. Recover and Cook an additional 5 minutes.
