Mango Chicken

This is an easy to make recipe and the chicken is tender and juicy. You can use prepared mango salsa. My husband is a picky eater and loved the flavors in the recipe.
I started with chicken tenders and I cubed them while they were partly frozen.
You can switch plain onion soup mix for the mushroom onion mix.

    canola pan spray
  • 1 lb
    chicken tenders, cubed
  • 1/4 c
    apple cider vinaigrette
  • 1 pkg
    mushroom onion "recipe secrets"
  • 2 small
    mangoes, cubed (or 1 lg)
  • 1 small
    zucchini, cubed

How to Make Mango Chicken


  1. Spray 13" square pan (or equivalent) with canola spray.
  2. Marinate Chicken in vinaigrette for 1/2 - 1 hr. in refrigerator.
  3. Prepare mango salsa: Cube mango into small cubes. Cube zucchini into small cubes and stir together. Keep in refrigerator until ready to use.
  4. Place marinated chicken into baking pan. Top with "Recipe Secrets" mix. Stir thoroughly.
  5. Cover chicken mixture with foil. Bake in a 400 degree oven for 40 minutes.
  6. Place salsa mixture in microwave and cook on high for 2 minutes.
  7. Remove chicken from oven, uncover and stir thoroughly. Top with salsa mixture. Recover and Cook an additional 5 minutes.
