Ingredients

  • 6 chicken thighs
  • 0 - salt and pepper
  • MARINADE
  • 1 1/2 cups coconut milk
  • 2 tablespoons vegetable oil
  • 1/2 tablespoon ground turmeric
  • 1/2 tablespoon ground coriander
  • 1/2 tablespoon ground cumin
  • 1/2 tablespoon paprika
  • 1/2 tablespoon ground chili powder
  • 6 cloves garlic minced
  • 2 - inch piece of ginger grated
  • 1 stalk lemongrass
  • 3 tablespoons brown sugar
  • SAUCE
  • 1/2 cup marinade liquid
  • 1 cup coconut milk, unsweetened
  • 2 tablespoons tamarind paste
  • 3 tablespoons brown sugar
  • 1/2 tablespoon chili crisp
  • 2 - scallions for garnish

How To Make malaysian chicken (ayam golek)

  • Step 1
    Mix the marinade ingredients together. Season the chicken with salt and pepper. Place the chicken in the marinade and marinate at least 2 hours, but best overnight.
  • Step 2
    Preheat oven to 400 degrees. To make this authentic, grill the chicken. Place the chicken on a baking sheet and bake for 45 minutes.
  • Step 3
    To make the sauce, mix the reserved marinade with the remaining ingredients and place in a saucepan. Bring to a boil, reduce to a simmer, and simmer about 10 minutes. Serve the chicken with the sauce and garnish with scallions.
