Ingredients
- 6 chicken thighs
- 0 - salt and pepper
- MARINADE
- 1 1/2 cups coconut milk
- 2 tablespoons vegetable oil
- 1/2 tablespoon ground turmeric
- 1/2 tablespoon ground coriander
- 1/2 tablespoon ground cumin
- 1/2 tablespoon paprika
- 1/2 tablespoon ground chili powder
- 6 cloves garlic minced
- 2 - inch piece of ginger grated
- 1 stalk lemongrass
- 3 tablespoons brown sugar
- SAUCE
- 1/2 cup marinade liquid
- 1 cup coconut milk, unsweetened
- 2 tablespoons tamarind paste
- 3 tablespoons brown sugar
- 1/2 tablespoon chili crisp
- 2 - scallions for garnish
How To Make malaysian chicken (ayam golek)

Step 1Mix the marinade ingredients together. Season the chicken with salt and pepper. Place the chicken in the marinade and marinate at least 2 hours, but best overnight.

Step 2Preheat oven to 400 degrees. To make this authentic, grill the chicken. Place the chicken on a baking sheet and bake for 45 minutes.

Step 3To make the sauce, mix the reserved marinade with the remaining ingredients and place in a saucepan. Bring to a boil, reduce to a simmer, and simmer about 10 minutes. Serve the chicken with the sauce and garnish with scallions.
