Ingredients
- 1 1/2 pounds boneless skinless chicken thighs cut into chunks
- 2 tablespoons olive oil
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 3 tablespoons maker's mark bourbon whiskey
- 4 tablespoons brown sugar
- 1 scallion chopped
- 4 cloves garlic minced
- 1 tablespoon grated ginger
- 4 ounces rice noodles
- fresh cilantro for garnish

Step 1Mix the olive oil, soy sauce, rice vinegar, bourbon, brown sugar, scallion, ginger, and garlic together. Add the chicken and let marinate overnight.

Step 2Preheat oven at 350 degrees. Add the chicken and marinade to a baking pan. Bake 30 minutes.
