1Season chicken with ginger, sherry, soy sauce and salt and pepper. Cook in 2 T. oil in large skillet over high heat for 5 minutes. Stir constantly. Remove from pan and keep hot.
2Put 2 T. oil in skillet and add remaining ingredients. Cook over high heat for 5 minutes. Stir constantly. Remove from heat. Put chicken on top of vegetables and allow juices from chicken to soak into vegetables for 5 minutes. Return skillet to high heat and cook for 5 minutes, stirring constantly.
