Ingredients
- 2 tablespoons ghee or oil
- 1 cup red onion chopped
- 6 cloves garlic
- 3 tablespoons grated ginger
- 28 ounces can crushed tomatoes
- 1 cup heavy cream
- 2 tablespoons madras curry powder
- 1 tablespoon garam masala
- 1 teaspoon salt
- 1 tablespoon brown sugar
- 2 boneless skinless chicken thighs cut into cubes
- 1 tablespoon lemon juice
- 1/4 cup fresh cilantro chopped
- basmati rice and naan for serving
How To Make madras chicken curry

Step 1In a large Dutch oven or skillet add the ghee or oil. Add the red onion, garlic and ginger. Saute for about 10 minutes until onions are soft.

Step 2Add the Madras curry powder, Garam Masala, salt and brown sugar. Add the crushed tomatoes, and heavy cream. Bring to a simmer and add the chicken pieces.

Step 3Simmer for 15 minutes. Stir in the lemon juice. Garnish with Cilantro. Serve with Basmati rice and naan
