Ingredients
- FOR THE CHICKEN
- 1 pound chicken breast
- 1/8 cup chicken broth
- salt and pepper to taste
- 2 tablespoons poppy seed salad dressing
- FOR THE SALAD
- 1 1/2 cups butter lettuce or romaine lettuce
- 2 cups fresh spinach
- 1/2 cup walnuts
- 1 pint sliced strawberries
- 1/2 cup poppy seed salad dressing
How To Make maddy and bill's summer dinner salad

Step 1Preheat oven to 425 degrees. Cut the chicken breasts into small thin strips and put in a bowl. Pour the chicken broth and 2 tablespoons Poppy Seed Dressing over the chicken. Sprinkle in a little salt and coarse black pepper to taste. Mix well.

Step 2Put double thickness aluminum foil on a small baking sheet. Put the chicken mixture in the middle, and spread out evenly. Fold the sides of the foil up to form a little pouch, with the top left open. Bake for 20-25 minutes until the chicken is no longer pink. Let the chicken cool to room temperature. You can also cook this pouch on a grill.

Step 3Slice the strawberries and Butter or Romaine lettuce, and put in a bowl. Add the spinach and cooled chicken slices.

Step 4Mix a 1/2 cup poppy seed dressing into the bowl. Sprinkle with walnuts. I like to serve this with toasted bread on the side.
