A great salad that is a complete meal. A refreshing dish to make when the weather is warm.

Ingredients

  • FOR THE CHICKEN
  • 1 pound chicken breast
  • 1/8 cup chicken broth
  • salt and pepper to taste
  • 2 tablespoons poppy seed salad dressing
  • FOR THE SALAD
  • 1 1/2 cups butter lettuce or romaine lettuce
  • 2 cups fresh spinach
  • 1/2 cup walnuts
  • 1 pint sliced strawberries
  • 1/2 cup poppy seed salad dressing

How To Make maddy and bill's summer dinner salad

  • Step 1
    Preheat oven to 425 degrees. Cut the chicken breasts into small thin strips and put in a bowl. Pour the chicken broth and 2 tablespoons Poppy Seed Dressing over the chicken. Sprinkle in a little salt and coarse black pepper to taste. Mix well.
  • Step 2
    Put double thickness aluminum foil on a small baking sheet. Put the chicken mixture in the middle, and spread out evenly. Fold the sides of the foil up to form a little pouch, with the top left open. Bake for 20-25 minutes until the chicken is no longer pink. Let the chicken cool to room temperature. You can also cook this pouch on a grill.
  • Step 3
    Slice the strawberries and Butter or Romaine lettuce, and put in a bowl. Add the spinach and cooled chicken slices.
  • Step 4
    Mix a 1/2 cup poppy seed dressing into the bowl. Sprinkle with walnuts. I like to serve this with toasted bread on the side.
