low carb tetrazinni (almost no carb!)

Comfort foods? Creamy, flavorful, mouth pleasing casseroles top the list for me. Not eating pasta of any type (and losing 74 lb in 7 months) has made me creative. I use Miracle Noodles. They are Shiratake noodles and can be purchased in Asian specialty shops.

Ingredients
- 1 pound cubed chicken or turkey
- 1 stick butter, melted
- 1 large onion, sliced
- 4 large grilled sweet red peppers (from a jar), diced
- 2 cups broth (can use the carcass to render broth)
- 1 teaspoon salt
- 1/2 teaspoon pepper (prefer white but black is fine)
- 1 cup heavy cream or 1/2 'n 1/2
- 1/2 teaspoon ground thyme and dried sage
- 1 cup panko
- - fresh parsley (optional) for garnish
How To Make low carb tetrazinni (almost no carb!)

Step 1Brush 9 x 13” casserole dish with a bit of melted butter. Sauté sliced onion in 1 tablespoon melted butter till tender and light golden edges. Place onions in casserole. Add 3 tablespoons melted butter to sauté pan and add 3 tablespoons flour. Stir until well blended. If you’d prefer, make the roux pale gold. Add seasonings to roux.

Step 2Add 1 cup ½ and ½ or milk and 1 cup heavy cream blending until creamy and thickened.

Step 3Place turkey and diced grilled peppers in the casserole. Add the shiratake (Miracle) noodles. (Cut the noodles up with scissors to 3 or 4 inch length).

Step 4Pour cream mixture over all and stir well. Pour 1 cup Panko into remaining butter, mix well and spread over casserole. Bake casserole 350 degrees for 30 minutes. Cool a bit before serving. Sprinkle with freshly minced parsley.
