lindsey's comforting chicken and rice
I made this dish for my children when they were little. It is my daughter's favorite chicken recipe. She now makes this for her own children. It is still our family's favorite comfort food. As an added bonus - it is so very easy!!

Ingredients
- 4-5 - chicken breast
- 2 cans cream of chicken soup
- 2 cans cream of celery soup
- 1/2 teaspoon poultry seasoning
- - salt/pepper to taste
- 4 stalks celery plus leaves
- 1 medium onion, quartered
- - rice or noodles
How To Make lindsey's comforting chicken and rice

Step 1Place chicken, celery stalks and onion in stock pot. Cover with water and boil approximately 25-30 minutes until chicken is no longer pink. Remove chicken from liquid, tear into bite-sized pieces.

Step 2While chicken is cooking, in a medium to large stock pot combine soups, poultry seasoning, salt and pepper. Cook over medium heat 20 minutes or until thoroughly heated. Add chicken and mix well. Heat thoroughly.

Step 3Serve over rice or egg noodles.
