I loved the chicken salad served at a local restaurant and decided I would try to replicate the taste at home. This recipe is easily adjusted to the number of chicken breast you want to prepare. I have found that a chicken breast makes two servings. It sounds too simple to be so delicious but it was the hit of our last group meeting at church.

- 1 - skinless chicken breast, cooked and shredded
- 2 tablespoons celery (chopped very small)
- 2 tablespoons pecans (chopped very small)
- 1 teaspoon sugar
- 2 to 2 1/2 tablespoons miracle whip salad dressing (adjust to your liking)
How To Make light & simple chicken salad for one

Step 1Cook skinless chicken breast in chicken broth. I use a slow cooker. Allow chicken to cool. Shred chicken breast, but not into pieces too small.

Step 2Add other ingredients and mix. If the chicken breast are very large, you may need to adjust the amount of each ingredient accordingly.
