I loved the chicken salad served at a local restaurant and decided I would try to replicate the taste at home. This recipe is easily adjusted to the number of chicken breast you want to prepare. I have found that a chicken breast makes two servings. It sounds too simple to be so delicious but it was the hit of our last group meeting at church.

How to Make Light & Simple Chicken Salad for One

  • 1Cook skinless chicken breast in chicken broth. I use a slow cooker. Allow chicken to cool. Shred chicken breast, but not into pieces too small.
  • 2Add other ingredients and mix. If the chicken breast are very large, you may need to adjust the amount of each ingredient accordingly.
