Ingredients

  • 2 boneless skinless chicken breasts
  • 2 tablespoons flour
  • 1 1/2 teaspoons lemon pepper (careful if yours has salt in it)
  • 1 tablespoon canola oil
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 tablespoon butter
  • 1 teaspoon lemon zest
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon flat leaf parsley, chopped
  • freshly ground black pepper

How To Make lemony peppery chicken

  • Step 1
    Slice each chicken breast into two fillets, so that they are thinner pieces. Place the flour and lemon pepper in a small bowl and mix. Sprinkle the flour mix over all sides of the chicken, rubbing it in until fully coated.
  • Step 2
    Place a large skillet over medium heat and add the oil. When very hot, add the chicken and cook until each side is golden brown, about 4-5 minutes per side. Transfer chicken to a plate and keep warm.
  • Step 3
    Add the butter and garlic to the skillet, and cook for about a minute, stirring constantly to avoid burning. Add the chicken broth and whisk to deglaze the pan and bring up all the brown bits. Add the zest and lemon juice, bring to a simmer and let cook for 3-5 minutes to reduce a little bit.
  • Step 4
    Taste and adjust seasoning if necessary. Return the chicken to the skillet and spoon the sauce over. Continue cooking for a few minutes until the chicken heats through. Season with freshly ground black pepper to taste. Garnish with the chopped parsley. Serve with noodles or rice.
