Ingredients
- 8 - chicken breast halves or thighs
- 1.625 cups tomato, dried bits
- 1/4 cup lemon juice
- 1/4 cup chicken stock
- 1 tablespoon lemon peel, grated
- 1 tablespoon rosemary
- pinch salt
- pinch pepper
How To Make lemony baked chicken

Step 1Place dried tomato bits in bottom of a baking dish or pan.

Step 2Place chicken one layer deep over tomato bits; pour lemon juice and stock over chicken.

Step 3Sprinkle lemon peel, rosemary, salt and pepper over all.

Step 4Cover and bake at 350 until tender, about 40 to 45 minutes.

Step 5Before serving, spoon juices over top of chicken.
