Ingredients

  • 8 - chicken breast halves or thighs
  • 1.625 cups tomato, dried bits
  • 1/4 cup lemon juice
  • 1/4 cup chicken stock
  • 1 tablespoon lemon peel, grated
  • 1 tablespoon rosemary
  • pinch salt
  • pinch pepper

How To Make lemony baked chicken

  • Step 1
    Place dried tomato bits in bottom of a baking dish or pan.
  • Step 2
    Place chicken one layer deep over tomato bits; pour lemon juice and stock over chicken.
  • Step 3
    Sprinkle lemon peel, rosemary, salt and pepper over all.
  • Step 4
    Cover and bake at 350 until tender, about 40 to 45 minutes.
  • Step 5
    Before serving, spoon juices over top of chicken.
