This is a dish that is easy to cook. You don't boil the pasta. It cooks in the oven. If you love chicken, lemon, and Feta you will love this dish.

Ingredients For lemon orzo chicken

  • 4 c
    chicken broth, low salt
  • 1 Tbsp
    unsalted butter
  • 1 1/4 tsp
    coarse salt
  • 1/4 tsp
    ground pepper
  • 1 lb
    orzo
  • 1 lb
    chicken tenders, cut into 1 inch pieces
  • 4 oz
    crumbled Feta cheese
  • 1/4 c
    chopped fresh dill
  • 2 tsp
    grated lemon zest
  • 1 Tbsp
    fresh lemon juice
  • 1 c
    grated Parmesan cheese

How To Make lemon orzo chicken

    Preheat oven to 400 degrees. In a saucepan bring the chicken stock the butter, salt, and pepper to a boil.

    In a 3-quart baking dish place orzo and chicken.

    Add dill, lemon zest, lemon juice, and Feta.

    Pour broth over over orzo.
  • 5
    Stir once to mix everything.

    Bake uncovered for about 40 mins until the orzo is done and the liquid is creamy.

    Sprinkle Parmesan on top and let stand for 5 minutes until cheese melts a bit.
