Need an easy and flavorful dinner option? Try this lemon orzo chicken. Except for heating the broth, it's all made in a 9x13 baking dish. No need to cook the orzo first. Just dump and bake. The bite-sized pieces of chicken are very tender and the casserole is filled with lemon flavor. We loved the combination of lemon with the Feta cheese.

Ingredients
- 4 cups chicken broth, low salt
- 1 tablespoon unsalted butter
- 1 1/4 teaspoons coarse salt
- 1/4 teaspoon ground pepper
- 1 pound orzo
- 1 pound chicken tenders, cut into 1 inch pieces
- 4 ounces crumbled Feta cheese
- 1/4 cup chopped fresh dill
- 2 teaspoons grated lemon zest
- 1 tablespoon fresh lemon juice
- 1 cup grated Parmesan cheese
How To Make lemon orzo chicken

Step 1Preheat oven to 400 degrees. In a saucepan bring the chicken stock the butter, salt, and pepper to a boil.

Step 2In a 3-quart baking dish place orzo and chicken.

Step 3Add dill, lemon zest, lemon juice, and Feta.

Step 4Pour broth over over orzo.

Step 5Stir once to mix everything.

Step 6Bake uncovered for about 40 mins until the orzo is done and the liquid is creamy.

Step 7Sprinkle Parmesan on top and let stand for 5 minutes until cheese melts a bit.
