Ingredients

  • 1 - lemon
  • 2 tablespoons olive oil
  • 1 - garlic clove, crushed
  • 1 tablespoon chopped fresh parsley, plus xtra sprigs for garnish
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried marjoram
  • 1/4 teaspoon salt and pepper
  • 4 - skinless, boneless, chicken breasts. ( 6oz. ea.)

How To Make lemon grilled chicken.

  • Step 1
    Using a peeler, remove strips of zest from half of the lemon, then trim into fine strips w/ a small knife. Set aside. Grate the other side of lemon to make 1 tbsp. zest. Now, squeeze the juice from the lemon into a large bowl.
  • Step 2
    Combine lemon zest, olive oil, garlic, parsley, thyme, marjoram, salt and pepper. Add the chicken breasts to the bowl and spoon the marinade over the chicken until well coated. cover with plastic wrap, and chill for 30 minutes. Even overnight.
  • Step 3
    Using a preheated grriddle, grill or broilor to medium heat. Put the chicken pieces on the griddle, resreving marinade. Cook chicken until cooked through, about 10 minutes on each side. Brush w/ the reserved marinade 2-3 times during cooking. Sprinkle w/ reserved lemon strips and serve immediately, garnished w/ parsley sprigs.

    Serving Suggestion: Healthy meal types, serve w/ grilled portobello mushrooms, and a zucchini and pepper pasta salad.
