My kids always ask for more after they eat these. The first time I made them with 1/2 zucchini and 1/2 bell peppers because I didn't have enough of the peppers and now they ask for it that way all the time. (I think it would taste just as good with all bell peppers which is the way I shared it here).

Ingredients

  • 3 1/2 c
    sliced onions
  • 2 1/2 c
    bell peppers
  • 1 tsp
    canola oil
  • 12 oz
    cooked chicken breast, shredded
  • 1/2 tsp
    ground ginger
  • 1 tsp
    lemon pepper seasoning
  • 1/4 c
    water
  • 8
    corn tortillas

How to Make Lemon Ginger Chicken Fajitas

Step-by-Step

  1. Saute onions, green peppers, and zucchini in canola oil until tender.
  2. Add, ground ginger, lemon pepper seasoning, hot sauce, shredded chicken and water to veggies. Cook over med. 3-5 minutes.
  3. Meanwhile Warm corn tortillas on nonstick griddle pan.
