After looking for a more economical way to buy chicken, I decided to purchase a whole roaster chicken (on sale) and came up with this juicy & delicious recipe.

Ingredients
- 7 1/2 pounds whole roaster chicken
- 4 tablespoons canola or olive oil
- 2 teaspoons lemon pepper seasoning
- 2 teaspoons mccormick's garlic powder with parsley
- 2 teaspoons seasoned salt
- 1 - lemon, cut in half
How To Make lemon & garlic roast chicken

Step 1Remove bag with giblets/liver from the inside of the chicken & discard. Rinse chicken well, inside and out. Pat dry with paper towels.

Step 2Rub the oil all over the outside of the chicken. Mix all seasonings in a small bowl, then place 1/2 of the seasonings under the skin. Rub the remaining seasoning on the outside of the chicken. Place the cut up lemon inside the cavity of the chicken. Place the chicken (breast side up) in a large pan on a rack. Pour 1 cup of water in the bottom of the pan.

Step 3Preheat the oven to 450 degrees. Cook the chicken for 15 minutes. Lower the temperature to 350 degrees, then cook for an additional 2-1/2 hours. Baste a few times while cooking. If the skin starts to get too brown, place tinfoil over the chicken. Let chicken cool for 15 minutes (with tinfoil covering it) before serving.
