lemon chicken diablo
This is one of our "go-to" meals whenever we go camping. Make sure you back away from the stove when you add the lemon juice or you'll be attacked by the red pepper steam!

Ingredients
- 1/2 cup all-purpose flour
- 1 dash salt
- 1 dash pepper
- 2 - boneless, skinless chicken breast halves, sliced horizontally into thin fillets
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 - clove garlic, minced or pressed through garlic press
- 1 teaspoon crushed red pepper flakes
- 1 tablespoon grated lemon peel (optional)
- 1/4 cup lemon juice
- 1 tablespoon dried or fresh chopped parsley
How To Make lemon chicken diablo

Step 1Combine flour, salt, and pepper in a bag.

Step 2Shake chicken in flour mixture to coat.

Step 3Sauté chicken in olive oil and butter, about 8 minutes on each side, until cooked through and golden.

Step 4Sprinkle with garlic, red pepper flakes, and lemon peel.

Step 5Cook another 2 minutes, turning chicken over a couple of times.

Step 6Add lemon juice to skillet, pouring over all pieces. (This is where you try not to breathe the steam!) The chicken will absorb the lemon juice.

Step 7Sprinkle with parsley and serve.
