lemon chicken diablo

This is one of our "go-to" meals whenever we go camping. Make sure you back away from the stove when you add the lemon juice or you'll be attacked by the red pepper steam!

Ingredients

  • 1/2 cup all-purpose flour
  • 1 dash salt
  • 1 dash pepper
  • 2 - boneless, skinless chicken breast halves, sliced horizontally into thin fillets
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 - clove garlic, minced or pressed through garlic press
  • 1 teaspoon crushed red pepper flakes
  • 1 tablespoon grated lemon peel (optional)
  • 1/4 cup lemon juice
  • 1 tablespoon dried or fresh chopped parsley

How To Make lemon chicken diablo

  • Step 1
    Combine flour, salt, and pepper in a bag.
  • Step 2
    Shake chicken in flour mixture to coat.
  • Step 3
    Sauté chicken in olive oil and butter, about 8 minutes on each side, until cooked through and golden.
  • Step 4
    Sprinkle with garlic, red pepper flakes, and lemon peel.
  • Step 5
    Cook another 2 minutes, turning chicken over a couple of times.
  • Step 6
    Add lemon juice to skillet, pouring over all pieces. (This is where you try not to breathe the steam!) The chicken will absorb the lemon juice.
  • Step 7
    Sprinkle with parsley and serve.
