lemon chicken and rice in one skillet
The original recipe came from the side of a chicken broth can. I didnt like some of the ingredients so i modified it. It is a great one dish meal. I fix boxed augratin potatoes as a side. I jack my box potatoes up by adding frozen chopped broccoli and cooked bacon.

Ingredients
- 1 package boneless chicken strips
- 2-3 cloves garlic
- 1 onion chopped
- 3 tablespoons butter melted
- 1-2 cup rice, instant and uncooked
- 1 cup shredded carrots
- 1-2 tablespoon parsley flakes
- 1-2 can chicken broth
- 2-3 tablespoons lemon juice concentrate
- 1-2 teaspoon lemon peel
- 1-2 tablespoon cornstarch
How To Make lemon chicken and rice in one skillet

Step 1Cut boneless chicken strips in chunks. Put butter in large skillet to melt . Add chopped garlic, onion. Cook till chicken is done. Add the corstarch. Cook till blended. Pour in the cans of chicken broth. Stir . Add the lemon juice, lemon peel, carrots and parsely flakes. Cook till carrots are tender. Add the rice. Cook another 5-6 minutes until rice is cooked.

Step 2As an option you can also add chopped or sliced green pepper or red, yellow or orange pepper. You could probably add broccoli too.
