Well I flubbed the dubb when I posted this recipe to the wrong place on island flavor so I am reposting it in the place it should have been posted. Hey, I'm a newby with these other groups and old to boot! So thats my excuse!! I will be posting a couple more with the same situation so sorry.. anyway, this is a good recipe so enjoy!!

Ingredients

  • 4 - whole chicken breast
  • 1/2 cup cornstarch
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 cup water
  • 4 - egg yolks. lightly beaten
  • - lemon sauce:
  • 1 1/2 cups water
  • 1/2 cup lemon juice
  • 3 1/2 tablespoons brown sugar
  • 3 tablespoons cornstarch
  • 3 tablespoons honey
  • 2 teaspoons instant chicken boullion
  • 1 teaspoon minced ginger

How To Make lemon chicken

  • Step 1
    Pound chicken with mallot to flatten slightly.
  • Step 2
    Combine cornstarch,salt, pepper in small bowl, gradually blend in water and egg yolks.
  • Step 3
    Heat oil over high heat (375*). Dip chicken breast one at a time into cornstarch, egg batter. Cook until chicken is golden brown. Drain on paper towel.
  • Step 4
    LEMON SAUCE: Mix cornstarch with water in saucepan and stir till smooth then add the lemon juice,brown sugar, honey chicken boullion and minced ginger.
  • Step 5
    Place on stove and boil till it thickens. Remove from stove.
  • Step 6
    Place fried chicken pieces on a platter and pour lemon sauce over all and serve while hot.
