OK, so tonight it was time to use up all the leftovers in the fridge. Some leftover chicken, vegetables, sour cream. Here is what I made and my family liked it. So before I forget I'm writing it down for all of us.

Ingredients
- 2 cups chicken or other meat
- 1 cup chicken broth
- 1 cup sour cream
- 1 cup instant rice
- 2 cups vegetables (leftover or fresh)
- 1 can cream soup
- 1 cup cheese, shredded
- 1/2 cup crushed crackers
How To Make leftover chicken or other meat casserole

Step 1Preheat oven to 350' Cube chicken or whatever leftover meat you have. Mix, soup, broth and sour cream together. Add chicken (meat), vegetables and rice into liquids and pour into casserole dish.

Step 2Bake for 30 minutes, covered.

Step 3Crush crackers and mix with cheese. Once the casserole from oven and sprinkle cracker crumbs/cheese(s) over casserole and return to oven for ten minutes. Remove and serve.
