leftover baked tortillas
This recipe was adapted from the Oven Baked Taco recipe from the mommyimhungry.blogspot.com website. It was adapted there from Blog Chef. I had some leftovers from City BBQ (chicken & beef brisket) that I needed to use and this was the perfect solution!! I used Ole El Paso taco seasoning that was leftover from a previous box of shells! I love it when I don't have to make a trip to the store when I make something!! (The better half enjoyed it, but the girls didn't care for the green peppers - guess I should have cooked them longer and cut them smaller.)

Ingredients
- 1 pound chicken or beef (or both)
- 1 tablespoon light butter
- 1 small onion, diced
- 1/2 - green pepper, diced
- 1/4 cup beef broth
- 1 small can diced green chilies
- - taco seasoning mix
- 8 ounces tomato sauce
- 1 cup shredded 2% mozzarella & 2% sharp cheddar
- 6 - flour tortillas
- - shredded lettuce, diced tomatoes, black beans, salsa, guacamole, sour cream, sliced olives, etc.
How To Make leftover baked tortillas

Step 1Preheat oven to 400*. In a large skillet melt butter, brown meats, and cook onion and pepper over medium high heat. Add beef broth. Add chilies, tomato sauce & taco seasoning. Mix well and cook until it thickens a bit.

Step 2Spoon meat into tortillas, fold and place into a 9x13" baking dish, sprayed with cooking spray. Cover with foil and bake for 10 minutes. Remove foil, sprinkle cheese over tortillas and bake uncovered for an additional 2-3 minutes or until cheese is melted. Remove from oven, top with additional toppings and enjoy!
