laurie's smothered chicken

This was something I came up with years ago when I didn't know what to do with the chicken I had thawed for dinner, and I had 3 hungry kids and a husband to feed. Thank heaven for canned soup! I've modified it somewhat in recent years, but it's still basically the same.

- 1 medium broiler/fryer, cut up
- 2 tablespoons olive oil
- 3/4 cup all purpose flour
- - sea salt
- - freshly ground black pepper
- 1 teaspoon paprika
- 1 can cream of chicken soup
How To Make laurie's smothered chicken

Step 1Wash chicken pieces. Combine flour, salt, pepper, and paprika in a medium bowl; coat chicken. Heat olive oil in a large skillet; cook chicken until lightly brown on both sides. Add soup, cover, and allow chicken to simmer over low heat until done, 30 - 45 minutes. Serve with mashed potatoes and a salad.
