This was something I came up with years ago when I didn't know what to do with the chicken I had thawed for dinner, and I had 3 hungry kids and a husband to feed. Thank heaven for canned soup! I've modified it somewhat in recent years, but it's still basically the same.

  • 1 md
    broiler/fryer, cut up
  • 2 Tbsp
    olive oil
  • 3/4 c
    all purpose flour
  • sea salt
  • freshly ground black pepper
  • 1 tsp
    paprika
  • 1 can
    cream of chicken soup

How To Make laurie's smothered chicken

  • 1
    Wash chicken pieces. Combine flour, salt, pepper, and paprika in a medium bowl; coat chicken. Heat olive oil in a large skillet; cook chicken until lightly brown on both sides. Add soup, cover, and allow chicken to simmer over low heat until done, 30 - 45 minutes. Serve with mashed potatoes and a salad.
