1-2package mexican blend cheese
How to Make Lasagna enchiladas
- Pre-heat oven to 400 F
- In a 9x13 baking dish, coat the bottom with red enchilada sauce, layer tortillas, black beans, ricotta cheese, mexican blend cheese, tortillas, black beans, ricotta cheese, chicken, red sauce, mexican cheese, tortillas, remaining black beans, ricotta cheese, red sauce, top with mexican cheese
- Cover in a dome (so it won't stick to the cheese) of tin foil, and bake for 30 min.
