lad's chicken or turkey pie

This is how I like chicken pie,I prefer vegetables(other than mushrooms and onions) as a side dish,not inside the chicken pie. You can also make turkey pie in this way,great way to use up leftover roast chicken or turkey.

Ingredients

  • - 3 lb chicken
  • - black pepper
  • - 2 chicken bouillon cubes
  • - 1-2 carrots,cut in 1 inch pieces
  • - 2 celery stalks,cut in 1 inch pieces
  • - 3-4 garlic cloves,crushed
  • - 1 onion,chopped coarsely
  • - 1/4 c butter or 1/4 c vegetable oil
  • - 1/4 c flour
  • - 2 c mushrooms,sliced
  • - 1 onion,chopped small
  • - salt and pepper,to taste
  • - 2 crust pie shell

How To Make lad's chicken or turkey pie

  • Step 1
    Wash chicken,cut in half,place ina large pot,cover with water,add next 5 ingredients. Simmer until chicken is tender,cook,drain,discard vegetables,remove skin and bones from chicken and cut into bite size pieces. In a skillet,melt butter or heat oil until hot. Saute mushrooms and chopped onion until soft,add flour and cook 3-4 minutes ,add 2 c chicken broth,whisk until thick and smooth,season with salt and pepper. Preheat oven to 375 degrees. Spray a 9x13 inch baking pan,line with pie crust,pour chicken filling ,top with 2nd pie crust,seal,flute edges and cut several slits into top crust.Bake 45 minutes to 1 hour until crust is gold brown and filling is bubbly.
