Ingredients
- 1/2 cup honey
- 1 inch piece ginger, shredded
- 1 small shallot, chopped
- 2 cloves garlic, minced
- 2 teaspoons rice vinegar
- 1 teaspoon mirin
- 3 tablespoons hoisin sauce
- 1/2 teaspoon sambal olek (or more if you like really spicy)
- 6 chicken drumsticks
- salt and pepper
- 4 cups canola oil, for deep frying
- 3 scallions, chopped
- 1/4 cup toasted nuts, crushed
How To Make kung poa chicken drums with ginger honey & nuts

Step 1In a saucepan, add the honey, ginger, shallot, garlic, rice vinegar, mirin, hoisin sauce and sambal. Cook about 5 minutes. Set aside.

Step 2Season the chicken with salt and pepper. Bring the oil to 350 degrees F. Working with 3 drums at a time, deep fry for about 10 to 15 minutes, depending on the size of the legs.

Step 3Pour the sauce over the thighs. Mix the scallions with the peanuts and top the chicken drums.
