Simple, fast, and Delicious! This is such a favorite at our house my husband requests it even on special occasions.

Ingredients

2/3 cup baking mix
2 tablespoons water
1 - egg
2 cups cheddar cheese, shredded
2 teaspoons vegetable oil
3 - skinless boneless chicken breasts cut into 1/2" pieces
1 jar salsa, chunky 16 oz.

How To Make kitty's salsa chicken bake

Step 1

Heat oven to 400 degrees. Spray 9" square pan with non stick spray.

Step 2

Stir together baking mix, water and egg.
Step 3

Spread mixture in pan and sprinkle with 1-1/2 cups of cheese
Step 4

Cook and stir chicken in oil over medium-high heat until it turns white. Stir in and heat salsa.
Step 5

Spoon Salsa chicken mixture over cheese
Step 6

Bake 22 - 25 minutes or until the edges turn dark golden brown. Sprinkle remaining 1/2 cup cheese over top and bake another 1-3 minutes until cheese melts.
